What is the secret to removing and/or replacing knobs for heater, defrost, wipers etc.?

Unfortunately they are all different. Some have set screws, some only come out forward with the whole switch by removing a nut on the back, and the headlight has a small button on the switch that releases the shaft/knob together.  Can't really remember which is which.

I thought I'd mention that if your stock knobs are in bad shape you could change them out like I did. I used some cheap aluminum knobs I got off ebay that are for a Jeep. They were less than $20 a set. They come in black and silver, maybe other colors.
